Liberalization of electricity market in Czech Republic saw the possibility for end - customers. The large boom in the development of organization came with the change of the of the owners. This company uses traditional line and staff organization chart, direct, but also undirect and methodic management, the elements of flexible organizational structures, process and project management, matrix organizational chart. Title: ANALÝZA LOGISTICKÉHO ŘETĚZCE V PEKÁRNĚ DK OPEN, S.R.O. Abstract: Management of the Supply Chain (SC) in food processing industry is not investigated in such extend, as in other branches of national economy. The authors of this paper tried to show which logistics principals are applied in the SC of bakery products and who is the principal member for managing the SC. Conclusions of this analysis show that big supermarkets are the key member for initiating all activities in the SC. They specify the demands of customers [families and single persons by means of forecasting demand] for bakery products and make orders in the bakery [assortment, quantity, delivery time, prices etc.]. The production of bakery depends on these big stores, because bakery products must be sold fresh and it is not possible to choose another region for selling them at a long distance. In similar way bakery influences the foregoing members, which are suppliers of materials. The link with the more distant members [firms purchasing cereals and farms which produce them] is not so consistent, because they can be members of other SC, too.In the SC different logistic procedures and methods were used, as for example: demand forecasting, PULL principals, evaluating of suppliers, FIFO method for storing materials, flexibility, integration of producers for receiving better prices of materials and continuous product innovation. The cluster enhances the competition ability of small and large enterprises and makes better position in the international market for them. In the region of South Bohemia clusters of water-supply technologies, wood-processing industry, renewable sources and biotechnologies are being prepared. Creating of a cluster for civil engineering is also being considered. The food also has to satisfy requirements on health wholesomeness, because it serves for people nutrition. According to the latest opinions, the sensory analysis in food quality appreciation is unsubstitutable.The evaluation outputs can have different form and for its processing contributes also mathematical-statistical methods. The consumer decision of the food quality is difficult to process due to entering of the other impacts which can be hardly mathematically formalized. One of the methods for transformation of the consumer thinking to the mathematical algorithm is for example fuzzy logic. The evaluation algorithm is described by the set of rules, which are close to the man thinking. One of aims there was a getting information about first experiences and quality systems using valuation from view of companies by means of research sound. The second aim was a finding about consumer's willingness to pay higher price of these products in connection with quality costs (problems of price avance). The results are that a requirement to introduced quality system in a food produce company is often condition to conclude supply-customer relationship and competitive advantage is realization of this condition. There was proved that milk's consumption is not depended on incomes, but it is influences of other factors. For the meat, where is bigger variability of assortment choosing, there is consumption's depend to incomes falling; a consumer is willing to pay higher prices. Growing areas were decreased, yield per hectare and the total annual production were very low, and potato prices substantially fluctuated. The absence of domestic potato production had to be supplemented by potato import. The passive balance in the foreign trade with this commodity was deepened. The economy of potato production is greatly influenced by state subsidies. The subsidy share in refundment of cost and in incomes without subsidies is high. Profitability of potato production is low. The potatoes grown in Slovakia are not competitive in comparison with the EU countries.
