It deals both with breeding itself and with subsequent sales, processing into final bio-production included. Results of the research are as follows: In this area the ecological farmers focus especially on livestock production with a significant part of beef-raising, particularly without milk production. In plant growing the production of bulk feed and potatoes is dominant. 82 % of eco-farmers sell their production, most of them consider the sales possibilities to be negative. A big problem represents the remarkable lack of bio-food producers within the whole region of South Bohemia, especially in the micro-region of Šumava, where whatever bio-products processor is missing. The farmers are thus forced to sell their ecological products to conventional processors. A great deal of ecological production loses its "bio-value" in this way. The most important problem is the sale of ecological meat production. In paradox, most of cattle raised on ecological grasslands are processed is conventional slaughter-houses. Next development of ecological production is expected in the future. It's important to coordinate the supply of production of ecological agriculture and the bio-products demand. The demand will grow up. It is the global consumer trend. So it is necessary to solve the weakest point of ecological production - the processing activities and the suitable distribution ways. It concerns the material flow of products which cannot be longer exploit according to their original designation (old products, defect products etc.). They are collected, sorted and recycled for their exploitation in the next production cycle.In animal production a similar flow is created by dead animals or parts of dead animals from slaughterhouses or meat processing firms. These materials are also collected, sorted and processed into products as industrial fat or meat bone meal. But here the flow stops because it is prohibited to use these new products as raw materials for new production (as fodder), but according to new laws emphasizing prevention from human illnesses, they must be liquidated. For this reason it is better to use the term animal waste disposal than reverse logistics. The 29 990 heads were examined. The attention was laid on the particular classis, their quantity, average slaughter weight and its relationship to the fleshed and over-fat during monitored period. The average slaughter weight of the whole population was 319.6 kg, what is 23-29 kg higher then republic average value. The caws create main part of the population, what corresponds with the restructuring of the Czech Republic breeds, when the quantity of the milk cows is significantly reduced. The classification to the commercial classes R2 and R3 predominate in the all monitored categories of the slaughter cattle. Among investigated categories according sex, ages and weight are recommended the price differences by the actual price mask, which creates pressure on the breeders to breed animals with the higher lean meat share. An analysis has therefore been carried out of the economic indicators of the dynamics of milk yield, overall production and the quality indicators of milk, the bulk purchase and buying price of milk, during the years 1998 to 2004, including a survey of the costs, profits and the marketability of milk in the given years. During the year 2004, the purchase price of milk, including compensation payment, ranged around 8.00 crowns (CZK) per litre. However, the production costs of one litre of milk sold increased to 8.42 crowns causing lack of profitability. This was a result of speeding growth rate in expenditure over milk yield. The level of expenditure and profits of the milk production of agricultural enterprises is going to be comparable with average results attained in EU-15. Static level of milk production is characteristic for all countries operating with a milk quota regime. Individual reference quantities become a limiting factor for many producers. Based on EU data milk output is forecast to exceed national quota for 2005-06 in Czech and Poland. A lot of customers in both countries are influenced by news of danger world wide animal infection (for example avian influence, BSE etc.). It could be very important reason to change customer preference of buying food and agriculture products in future. Not only fear of danger world wide animal infection could change customer preference, but generally it could be quality of food and agriculture products too. As a consequence of this situation customers start to more observing domicile of origin and quality of food. The results of research in both countries still confirm not only range of opinions apprehensive of threat of low-quality and dangerous to life agricultural and food products, but they show us difference between the Czech Republic and Slovakia too.
